Aviyal - Aviyal is delicious side dish prepared in Kerala . It is mixture of vegetables together with curd and coconut.It is included in most festive days.It is believed to have its origin duing Mahabharatha period by Bhima.

Aviyal - Ingredients:

Vegetables 3/4 kg(Drumsticks, Brinjals, Yam, String beans,
Raw banana, Ash gourd, Ridge
gourd,Snakegaurd,Carrot,Cucumber)
Turmeric powder 1/2 tsp
Red chilli powder  1 tsp
Green chillies  4 nos.
Grated coconut  1 cup
Curd 4 tbsp
Oil  2 tbsp
Curry leaves 5-6 nos.
jeera 1/2 tsp
Aviyal - Directions:
  1. Peel and cyt the vegetables lengthwise.

  2. Take a non stick kadai and put vegetables so that hard vegetable which takes more time to cook(eg carrot) cooked should be in the bottom).Pour salt on the top

  3. Close it with lid and let it cook in steam(don't add water).

  4. Dont mix the vegetables with spoon.

  5. Grind the coconut to a fine paste with green chilli and jeera.

  6. When the vegetables are 1/2 done pour turmeric and red chilli over it and close it.

  7. When the vegetables are almost cooked add grinded coconut,curry leaves and put it on the top of vegetable and put in it low fire for 4-5 mins.

  8. Add curd on it and mix nicely so that the coconut is evenly distributed.

  9. Remove from fire and serve hot with rice.

  10. Note : You can use tramarind pulp instead of curd.
