Bitter Gourd Theeyal - Ingredients:

Finely chopped bitter gourd (pavakka or karela) 2
turmeric powder 1/2 tsp 
grated coconut 1 cup 
Chopped shallot 2
thinly sliced ginger pieces 1 tbsp 
dry red chilies 5 
coriander seeds 1 tsp 
fenugreek seeds 1/8 tsp 
cumin seeds 1/8 tsp 
green chilies 4 
tamarind paste 1 tbsp 
Tamarind size of gooseberry
curry leaves 1 bunch 
salt to taste
oil 2 tsp
mustard seeds 1/4 tsp 

Bitter Gourd Theeyal - Directions:
  1. Cook bitter gourd pieces with the turmeric powder and salt with just enough water to cook, and cook.

  2. Dry roast the grated coconut till brown and keep aside.

  3. Roast 4 red chilies, coriander powder, fenugreek seeds and cumin seeds and keep aside.

  4. Add a little bit of oil and saute the shallots and ginger pieces one after the other till brown.

  5. Grind all the fried ingredients with a little water to form a smooth paste.

  6. Add some more oil to the pan and saute the cooked bitter gourd pieces along with the slit green chilies till the pieces starts to turn brown.

  7. Add the ground spice paste, tamarind paste, curry leaves, salt and a cup or more of water to the pan and stir well to combine. Cook till the gravy thickens. Taste and add more tamarind paste if needed.

  8. To Season, heat oil in a pan, add mustard seeds. When the mustard seeds start to splutter, add chooped shallot, red chilly , curry leaves and fry well. Pour this over the prepared gravy.

  9. Serve with rice.
