Bittergourd Gojju - Ingredients:

medium sized bittergourds 2 
garlic cloves minced 4
red chilli powder 2 tsp 
cumin powder 1 tsp 
turmeric powder 1/2 tsp 
dhania powder 1 tsp 
sambhar powder 2 tsp 
shredded coconut 2 tsp 
methi(fenugreek) seeds  powder 1 tsp 
white sesame   powder 2 tsps 
sugar 2 tsp 
juice of tamarind   a lemon size
Hing A pinch 
Salt to taste
mustard seeds 1 tsp 
curry leaves a few


Bittergourd Gojju - Directions:
  1. Remove the skin of the gourds.

  2. Cut lengthwise and remove the seeds.

  3. Cut them into large half-rounds.

  4. put salt on them and place a heavy weight on them to reduce the bitterness of the vegetable.

  5. Set aside for 1/2 hr.

  6. Fry in 3 tsp oil till well browned.

  7. Drain and set aside.

  8. Heat about 3 tsp oil and add the mustard and curry leaves.

  9. When the mustard crackles, add the minced onion and garlic.

  10. Fry till done. Now add all the raw dry powders and fry for 2 minutes.

  11. Add the shrdded coconut and keep frying for 2 more minutes.

  12. Add the fenugreek and sesame powders and mix well.

  13. Add the fried gourd, jaggery and tamarind.

  14. Add salt to taste and enough water to cover the vegetable.

  15. Bring to a boil and reduce heat.

  16. Cook till the gavy thickens .

  17. Remove from heat and add the hing.

  18. Mix well and serve like a chutney with dosa or chapati
