Ginger-garlic paste 1 tbsp
Turmeric powder 1/2 tsp
Chilli powder 1 tbsp
Coriander powder 1 1/2 tbsp
Garam masala powder 1 tsp
Salt to taste
Oil as required

Brinjal Curry - Directions:
Cut brinjal in quarter sizes and keep aside.
Heat oil in a pan.
Add onions and saute till translucent.
Add ginger-garlic mixture and stir till the raw smell goes.
Add the masala in order and fry for some time.
Add the cut brinjals and mix with the masalas.
Add coriander leaves and sufficient amount of water to cook the brinjals
When cooked, smash the brinjals slightly to make the gravy thick.
When required amount of gravy is left, remove from fire and serve with rotis or chapattis.
