Carrot Curry - Ingredients:

Carrots  1/2 kg
Grated coconut  1/4 cup
Mustard seeds 1/2 tsp
Urad dal 1 tsp
Moong dal 2 tsp,
Red chillies  2
Salt 1/2 tsp
Oil  2 tsp
water 1/4 cup
Carrot Curry - Directions:
  1. Peel and cut carrots into thin long pieces.

  2. Heat the oil and add the mustard seeds and allow to splutter.

  3. Add the urad dal. When it begins to roast, add the moong dal and add water on it.

  4. Leave it covered for 5 minutes in medium heat.

  5. Add the carrots, salt and cook covered in low heat for 10 minutes.

  6. Add the grated coconuts. Stir and remove from heat.
