Cashew Rice - Ingredients:

rice 1 cup 
chopped cashews 1/2 cup 
sesame seeds 1 tsp
coriander seeds  1 tsp
urad dal 1 tsp
dry coconut 1 tbsp 
Red chilies 4
mustard seeds 1/2 tsp
curry leaves 5
asafoetida A pinch 
lemon juice 2 tbsp
Oil 2 tbsp
Salt to taste
Cashew Rice - Directions:
  1. Cook the rice taking care the grains are separate.

  2. Dry roast sesame seeds, coriander seeds, urad dal and red chilies(take care not to burn anything. You can roast them one by one if needed). Grind them to a powder along with coconut.

  3. Heat oil and add mustard seeds. When they start popping, add curry leaves, asafoetida and cashews. Fry for few minutes on a low flame. Now add the spice powder and salt.

  4. Add rice and mix well. Sprinkle the lemon juice .

  5. Serve hot.
