Duck Vindaloo - Ingredients:

dried red chilies 6
cumin seeds 1 Tbsp.
mustard seeds 1 Tbsp.
turmeric 1 tsp.
curry powder 3 tsp.
peppercorns 5
cardamom 5
cloves  5
cinnamon  1 inch long  6 sticks
salt to taste
vinegar 1 cup  
Duck 2 lb.(cut into cubes)
butter, melted 2 Tbsp.
bay leaves 3
fresh ginger  chopped  1 Tbsp.
garlic  crushed 2 cloves
garlic, pulped in 1 4 cloves
water 1 cup  
large onion  sliced  1
Duck Vindaloo - Directions:
  1. Grind the first 10 ingredients in a blender adding 1 cup of vinegar into a smooth

  2. paste.

  3. Place the duck in a dish, cover with the paste and leave it to soak for 2 hours.

  4. In a fry pan, heat the butter and then add meat mixed with spices and vinegar.

  5. After 2 minutes add the remaining ingredients. Simmer gently for 2 hours or until the meat is tender. Serve hot with rice.
