Fried Carrots - Ingredients:

carrots 4 
urad dhal 1/2 tsp. 
mustard seeds 1/4 tsp. 
oil 3 Tbsp. 
onion chopped 2 Tbsp. 
hot green pepper chopped 2 tsp. 
coconut shredded 2 Tbsp. 
salt to taste
 
Fried Carrots - Directions:
  1. Shred carrots with a shredder.

  2. In a pan saute urad dhal and mustard seeds in oil.

  3. When mustard seeds crack, add the onion and green pepper. When the

  4. onion turns into golden color, add the shredded carrots, coconut and salt. Stir and

  5. add 1/8 cup of water. Keep on stirring often and when carrots become soft, remove

  6. from heat.

  7. Serve it hot with rice.
