Fried Spinach - Ingredients:

Spinach 1 kg
Oil 3 Tbsp.
mustard seeds 1/2 tsp.
urad dhal 1/2 tsp.
onion  chopped  1 Tbsp.
green pepper  chopped  1
Salt to taste
coconut  shredded  2 Tbsp.
Fried Spinach - Directions:
  1. Wash spinach very well and cut spinach into tiny pieces. Heat oil in the frying pan.

  2. Add mustard seeds and urad dhal. When mustard seeds crack, add the onion and the pepper.

  3. After 2 minutes, add the spinach and salt to it. Keep stirring often. Close the pan with the lid and spinach will be cooked in the oil itself. (Do not add any water.)

  4. When the spinach becomes tender, remove from heat and add the shredded coconut.

  5. Mix well and serve hot.
