Ginger Curry - Ingredients:

Ginger 250 gms
Fenugreek Seeds 1 tsp
Green chili 5
Red Chili 12 nos
Tamarind 1 big lemon size
Salt to taste
Curry leaves a few
Jaggery 2 tbsp(Optional)
Ginger Curry - Directions:
  1. Fry red chili and fenugreek seed seperately.

  2. Powder them seperately.

  3. Slice ginger into thin rounds.

  4. Deep fry in oil until deep brown.

  5. Break into small pieces and keep aside.

  6. Take tamarind pulp.

  7. Add salt and half litre of water.

  8. Boil it.

  9. Add chili powder,slit green chilies and curry leaves.

  10. Boil it.When it is nicely boiled add fried ginger.

  11. When thick add fenugreek powder and simmer for a minute.

  12. Add alittle jagerry if you want curry to ne sweet.

  13. Season with mustard seed, red chili,curry leaves in little oil and add to prepared ginger curry.
