Idly Vegetable Sandwitch - Ingredients:

Rice 2 cup	
Mustard 1 tsp.
urad dhal 1 cup	
turmeric  powder  1/2 tsp.
cauliflower 1/4  
oil 6 tsp.
carrot	 1
curry leaves 1 Tbsp.
potato	 1
coriander leaves 2 Tbsp.
onion	chopped 1
coconut flakes	 2 tsp.
salt 1 tsp.
masala powder  1 tsp.
Idly Vegetable Sandwitch - Directions:
  1. Prepare batter as for Idli using the rice and urad dhal.(refer Idli recipe in breakfast section)

  2. Peel potato. Shred carrot and potato. Cut onion and cauliflower into small pieces.

  3. In a fry pan, heat 4 tsp. oil and saute cut vegetables and coconut flakes for 5-10 minutes.

  4. Add salt, turmeric and the optional masala powder. In another fry pan, saute mustard

  5. seeds in 2 tsp. oil until they pop, add curry leaves and swirl for a minute.

  6. Add to batter. Add the coriander leaves to the batter and mix well. Grease idly-plates. First add 2 Tbsp. of batter to each hollow then 1 tsp. fried vegetables, then top off with

  7. 1 Tbsp. of the batter.

  8. Steam cook for 5-7 minutes.
