black bean (urad daal) powder 4 cups
salt 1 tsp
black peppercorns 1/2 tsp
A pinch of asafoetida powder
white cumin seeds 1/2 tsp
A pinch of baking soda / powder
Ghee / oil to grease
Pappadam(Pappad) - Directions:
Place all ingredients in a mortar and pound thoroughly using a pestle or use an electric grinder.
Add enough water to make a stiff dough.
Divide the mixture into 16 portions. Roll out each one into a very thin round.
Spread them out on a greased plastic sheet to dry on both sides in the sun or warmest place in the house.
When dry store in a clean bag or covered container.
Deep-fry just before use.
