Potato Podimas - Ingredients:

Potatos 500 gms.
Cashewnuts 25 gms.
Refined oil 2 tbsp.
Mustard seeds  tbsp.
Bengal gram(channa dhal) 1 tbsp.
Ginger(adrak)1 finely chopped 1
Green chilli slit 1
Salt to taste.
Turmeric(haldi) powder  tbsp.
Green coriander chopped (hara dhaniya ) a few leaves
Juice of lemon   

Potato Podimas - Directions:
  1. Parboil the potatoes,peel and mash.Keep aside.

  2. Fry the cashewnuts in one tbsp of oil till golden.Keep aside.

  3. Heat the remaining oil in another pan;saut the mustard seeds till they start crackling. Add the Bengal gram,ginger and green chilly saut until the gram turns golden.

  4. Add the mashed potatoes,salt,fried cashewnuts and turmeric powder.Toss for 6 minutes.Remove from fire and mix in green coriander and lemon juice.

  5. Serve hot.
