Qubani ka meetha - Ingredients:

Ingredients:

	
1 kg dry apricots (qubani)
250gms sugar
Cream for garnishing
Vanilla essence
Qubani ka meetha - Directions:
  1. * After washing the apricots, soak them in water for about three hours.

  2. * Now, boil them enough to make them soft and tender.

  3. * Let cool and then deseed and mash them well.

  4. * Pass the mashed pulp through a sieve to get a uniform, smooth paste.

  5. * Now you should put this pulp on heat for boiling.

  6. * Keep stirring continuously and once it starts boiling, add the sugar.

  7. * Let it be on heat for another five minutes while stirring continuously.

  8. * Take it off the heat and refrigerate.

  9. * Beat in the vanilla essence in the cream.

  10. * When serving, top the dish with the cream and serve.

  11. Qubani ka meetha can be stored for 3 days in refrigerator.

  12. The Apricot seeds have almonds in them. You could break open the seeds and use the almonds to top the dessert before serving.
