Rajasthani Bhindi - Ingredients:

Ladyfingers 250 gm 
Bengal gram flour 3 tsp 
Onion seeds 1/2 tsp 
Red chilli powder 1/2 tsp 
Cumin powder 1 tsp 
Coriander powder 1 tsp 
Fennel seeds 1-1/2 tsp 
Dry mango powder 1 tsp 
Green chillies 4 
Oil 4 tbsp 
Turmeric powder 1/2 tsp 
Cumin seeds 1/4 tsp 
Garam masala powder 1 tsp 
Salt to taste
Rajasthani Bhindi - Directions:
  1. Rinse and wipe the ladyfingers.

  2. Snip off the two ends and cut on one side.

  3. Combine bengal gram flour, 1 tsp fennel seeds and all other dry masalas except cumin and onion seeds in a bowl, mix well.

  4. Add salt and a tbsp of oil to it.

  5. Fill this masala into the ladyfingers, set aside.

  6. Heat up 3 tbsp of oil and fry rest of the fennel seeds, cumin seeds, green chillies and onion seeds for a minute.

  7. Add stuffed ladyfingers to it and stir fry for 5 minutes.

  8. Cover and fry till they are cooked, stirring occasionally.

  9. Uncover and stir fry until the ladyfingers are crunchy.
