Spiced Vegetables and Lentils curry - Ingredients:
vegetable oil 2 tbsp
medium garlic clove, chopped finely 1
ground cumin 1 tsp
masoor dal 1/2 cup
peeled grated ginger 1/2 tsp
turmeric 1/8 tsp
crushed red pepper 1/2 tsp
salt to taste
water 2 cups
Spiced Vegetables and Lentils curry - Directions:
Rinse and drain masoor dal.
Put 1 tablespoon of oil in a pot and heat over medium heat. Add garlic and ground cumin and saut� until garlic begins to sizzle and turn golden brown.
Add masoor dal, ginger, turmeric, crushed red pepper, and salt to pan and stir until combined.
Add water to pot and bring to a low simmer. Cover tightly with lid and cook at a low simmer for about 20 minutes, or until dal is soft.
In the meantime, add 1 tablespoon of oil to a separate pan and heat over medium heat. Add zucchini. Stir occasional until zucchini is tender and golden brown, about 10 minutes. Add a little water (2 or 3 tablespoons), as necessary, to prevent zucchini from sticking to pan. Remove from heat.
When dal is finished cooking. Stir to combine.
