Spicy Brinjal Curry - Ingredients:

Brinjal(Vazhuthananga)   150 gm
Turmeric powder  1/2 tsp
Chilly powder  1 1/2 tbsp
Coriander powder   1/2 tsp
Grated coconut   2 tbsp
Fenugreek(Uluva) seeds  1/2 tsp
Salt to taste
Oil   4 tbsp
Curry leaves   A few
Pepper  A pinch
Garlic pod  7 nos
Tamarind 1/2 lemon size
Coconut milk   2 tbsp 	
Spicy Brinjal Curry - Directions:
  1. Cut brinjal into thin round pieces, each piece about 1 cm thick.

  2. Mix together turmeric powder, 1/2 tsp of chilly powder, salt and a little water to make a paste.

  3. Apply the paste on brinjal pieces and keep it for 10 mins.

  4. Heat 3 tbsp of oil in a pan or a kadai.

  5. Fry the marinated brinjal pieces, until it turns brown.

  6. Heat 1 tbsp of oil in a pan.

  7. Fry chopped garlic, until it turns brown.

  8. Add grated coconut , fenugreek, curry leaves, remaining chilly powder, coriander powder and a pinch of pepper.

  9. Take the mix out of pan and grind it well.

  10. Mix tamarind paste with a little water and add to the fried brinjal pieces.

  11. Cook for 5 mins on a medium heat.

  12. Add the ground mix and saute well.

  13. Add coconut milk.

  14. Add salt and mix well.

  15. Cook on a medium flame for another 10 mins.

  16. remove from heat and 1 tbsp of coconut oil and curry leaves.
