Sweet Chutney - Ingredients:

Pineapple Pieces (approx 1/2") 2 cups 
Water 1/2 cup 
Salt to taste
Sugar 3 tbsp 
Turmeric Powder 1/2 tsp 
Mustard 1/4 tsp 
Red Chilli 1 
Cumin Seeds 1 tsp 
Grated Coconut 3/4 cup 
Oil 2 tsp 
Mustard Seeds 1/4 tsp 
Green Chillies, slit 2 
Urad Dal 1/4 tsp 
Curry Leaves 4-5 
Sweet Chutney - Directions:
  1. Grind together mustard, chilli and cumin seeds.

  2. Grind coconut into fine paste.

  3. Mix coconut and chilli paste.

  4. Boil pineapple pieces in water with turmeric and salt.

  5. Cook till the pieces are tender.

  6. Add sugar and stir well.

  7. Cook till required consistency (like a syrup).

  8. Add coconut mixture.

  9. Remove from fire.

  10. Heat oil.

  11. Add urad dal and then mustard seeds.

  12. After seeds splutter add green chillies and curry leaves.

  13. Put the seasoning in the pineapple mixture.

  14. Put on gas, and cook for 1-2 mins.

  15. Remove from fire and garnish with chopped coriander leaves.
