Vegetable Kurma - Ingredients:

Potato diced 2 
Green Peas  1/2 cup
Carrot diced 1 
Onion diced 1
Shallots diced 5 nos
Green chilly  5 nos
Coconut  5 tbsp
Turmeric powder 1/4 tsp
Coriander powder  2 tsp
Garam masala  1 tsp
Cooking oil  1 tbsp
Salt  to taste
Curry leaves  1 stem 	
Vegetable Kurma - Directions:
  1. Pressure cook all the vegetables with green chillies and salt upto 3 whistles.

  2. Grind together coconut and all the powders.

  3. Add the paste to the cooked vegetables and boil in low flame.

  4. When aroma starts to rise,remove from flame.

  5. Season mustard seeds in oil,followed by broken red chillies and curry leaves and add to the curry.

  6. Serve hot with chappathis.
