Vegetable Roti - Ingredients:

Rice flour   2 cups
carrot finely grated 1
Cucumber finely grated 1
Bell  pepper finely grated 1
onion  finely grated 1
Jeera   1/2 tsp
Green chillies   finely chopped 2
Coriander finely chopped a few
Curry leaves finely chopped  a few
fresh coconut  finely grated 1/2 cup
Salt   to taste
Oil  1 tsp
Vegetable Roti - Directions:
  1. Mix the grated vegetables, jeera, green chillies and the curry /coriander leaves in a large bowl.

  2. Add rice flour and salt to this mixture till it becomes a soft dough.

  3. Knead the dough a little bit to mix properly and shape it into small balls.

  4. Coat a pan with a few drops of oil.

  5. Place one small ball on the pan and slowly and press lile chapathi.

  6. Place this pan on the stove under medium heat. When the rotti gets cooked turn it over .

  7. Serve hot.
